Chef Steven’s Fajitas Recipe

Chef Steven’s Fajitas Recipe

Serves: 2

Ingredients: 2 Tablespoons of vegetable oil 1 Small onion (sliced thin) 1 Medium zucchini (diced) 1 Red bell pepper (sliced thin) 1 Green bell pepper (sliced thin) 1/2 Tablespoon of cumin seeds 1/2 Teaspoon of dried cilantro 1/4 Teaspoon of Himalayan salt A pinch of ground chipotle pepper 1 Avocado (diced) 1 Lime Tapatio sauce (to taste) Ground black pepper (to taste) Equipment: 1 Large sauté pan 1 Large cast iron pan

Directions: 1. Heat oven to 400*F and place cast iron in oven. 2. Heat vegetable oil in sauté pan over medium-high heat. 3. Add cumin seeds, cook until fragrant. (About 5-10 seconds) Be careful not to burn the seeds 4. Add onions and bell peppers, chipotle, salt and cilantro. 5. Cook and stir for 5 minutes until onions and peppers are crisp. 6. Remove cast iron pan from oven and pour in sauté with all juices.

To plate: Enjoy the fajitas with tortilla, chips, in a salad or just by themselves! Top with avocado, a squeeze of lime juice (about half a lime), Tapatio hot sauce, and ground black pepper to taste. Enjoy and Happy Cooking!
